August 2018 has become a very exciting month for Bali Culinary Pastry School since our one year professional program students complete their final practical exam by running a POP UP restaurants. They must serve Afternoon Tea and Dinner menu in their POP UP restaurants that took place at Taman Bhagawan, Nusa Dua , Bali.

In the final exam this time, the students were divided into two teams. Each team consisted of nine students.  The first team created a POP UP restaurant called Rojo BlancoMexican Indonesian theme dishes.  While the second team was created Pinarello based on its set with Tropical theme. Both team served the Afternoon Tea menu for thirty people and the Dinner menu for sixty five people.

Every restaurant team must designed its restaurant concept, food style to its operation of the event. From concepting to food production, from purchasing ingredients to plating food, from organizing the team to selling and marketing restaurant to the public. They were required to work in a team to do planning, budgeting, for sponsors finding, as well as designing the menu. The project was built within three months.

They must practice and perform the knowledge and skills they had learned at school. They were guided along the way the chef instructors of Bali Culinary Pastry School.  The chef instructors continuously coach and facilitate the students without interfering their decision making. Professional Chef Judges have been invited to experience both restaurants.  We had the honor to have Chef Allen Stevano and Chef Diego Martinelli and judged their performance.

Through this journey, the students are expected to experience and learn about restaurant business settings in a real world. Eventually, whether or not they have decided to be professional chefs, or to own their restaurants as entrepreneurs, they need to be ready, having some understandings of various challenges in the real life situation.

CONGRATULATION to both of restaurant owners: Rojo Blaco and Pinarello for the beautiful restaurant concepts and dishes! It is a process to experience, a journey to remember, and an achievement to be proud of. Anything is possible when you work as a team with excellence teamwork.
